Here’s my story:
“I created my industry in 1996 restoring vines situated on 5 towns around Dallet. I use red skin bus white juice grapes (gamay of Auvergne and pinot) and the chardonnay, I vinify it like white vine but little colored. My philosophy is based on little output (20hl/ha max). It permits not to add sugar to improve the alcohol level and not to use other material (yeast, enzyme…) to keep the essential of the vine, climate and grape. The vineyard is divided on 2 towns (Dallet and Chauriat) for a total of 2 hectares. The towns are near a volcano called the Puy de Mur, grounds are basaltic. Vines ages are from 15 to 70 years. There is no use of pesticide, and harvest is manual from the end of September to the middle of October”
